Irish Soda Bread.

Ingredients:
5 C. Flour
2 1/2 tablespoon. Sugar
1 tsp. Salt
1 tsp. baking soda
1/4 C. butter (Melted)
2 eggs
2 1/4 C. buttermilk

Mix together all dry ingredients in a mixer with a dough hook.  Add remaining ingredients to the mixer mix on low until incorporated.  Dough will be sticky.

Transfer to a lightly floured surface and divide in half.  Shape into rough round loaves.  Do not over-knead.  Place loaves on a lightly greased baking sheet.  Using a serrated knife make an X shape cut across the top of the dough.  Place in oven, bake 375 for 15 min. then drop the temperature to 345 for another 15-20 min. until the internal temperature reaches 190 degrees.
