Spicy Watermelon Salad

Summer is filled with barbecues and get together’s with family and friends. While everyone loves your world famous potato salad, surprise your loved ones at your next pot luck gathering with a dish that will add a little heat to their meal.

What You Will Need:
  • • 3/4 cup red wine vinegar
  • • 1 white onion, sliced into thin rings
  • • 2 lbs watermelon, cubed
  • • 1/4 cup lime juice
  • • 1 jalapeño, halved, seeded, and sliced
  • • 1 tablespoon chopped fresh basil leaves
  • • 1 tablespoon chopped fresh mint leaves
  • • 8 ounces feta, broken into chunks
  • • 1/2 teaspoon kosher salt
  • • 1 teaspoon pepper
  • • 1/4 teaspoon cayenne
  • *OPTIONAL: You can substitute feta cheese for cojita cheese
  • Tasty Tip: To add a little more spice to your salad, substitute the jalapeño with a slightly hotter serrano pepper.
What You Do:
  • Heat vinegar in a small saucepan over high heat until boiling.
  • Add onion and cook, turning as needed. Cook onion until it’s pink and most of vinegar is absorbed, approximately 5 minutes.
  • Spoon onion out of pan, let cool slightly
  • Roughly chop your cooked onion
  • Mix remaining ingredients in a large bowl.
  • Add onion and toss just to combine.
