THURSDAY, UTAH (Good4Utah)-Cooking breakfast or dinner can sometimes be the last thing on your mind after you run errands and take your kids to and from after school activities. But what if you could make delicious meals that your kids love that don't take a lot of time in the kitchen? Chef Antonio Skeeters joined us in studio today to show us how to make a couple different "quick-fix" meals. Chef Tony showed us how to make Bacon Pancake Dippers, a breakfast on the go option, and a quick and easy gourmet pasta for lunch. Are you looking to save time in the kitchen? Bacon Pancake Dippers
12 slices of bacon (fully cooked and set aside)
Packaged Pancake Batter or follow this recipe
1 1/4 Cup All Purpose Flour
1 Cup Milk (any milk or water)
1 TBSP Baking Powder
1 large egg
2 TBSP Butter (melted)
2 TBSP Sugar
1/2 tsp Salt
Combine all the dry ingredients, sift together in a medium bowl
In a separate bowl or measuring cup, combine milk, egg and melted butter, (mix until egg is broken down)
Make a well into the middle of the dry ingredients and add the milk mixture
Slowly combine until just mixed but still slightly lumpy (do not over mix)
If using packaged pancake mix, prepare as instructed.
Use a lightly oiled hot griddle or cast iron pan if available (I melt butter directly onto the surface of the pan/griddle and wipe with a clean paper towel).
Take one slice of bacon and dip it into the pancake batter, place it directly onto the griddle or pan. Cook each side 45 seconds to 1 minute (or until golden brown) turn and repeat.
Set aside on a baking rack until batch is completed.
Serve with warm syrup and butter (I take approx 1/2 cup of syrup and add 2 tbsp of butter and melt them together with 1//4 tsp of almond extract for an added punch of flavor)
Quick and Easy Gourmet Pasta
(the pasta can easily be substituted with gluten free pasta)
1/2 lb Rotini Pasta (or similar)
1/4 cup prepared pesto or make it from scratch (parsley, basil, garlic, olive oil, parm. cheese and pine nuts)
1/4 diced yellow onion (about 1/4 of an onion)
2 garlic cloves, minced
1 can diced tomato (28oz can, drained)
2 tsp brown sugar
salt and pepper to taste
Prepare the pasta, drain, reserve the pasta water and set aside
In a large bottom saute pan or fryer pan heat approx 1 tbsp of olive oil
add the onion and sweat until tender and slightly translucent
add the minced garlic stir for about 1 minute
add the tomatoes, cook for approx 3-4 minutes until it starts to bubble and reduce
add the brown sugar, salt and pepper
remove from the heat add 1/4 cup of pesto to the sauce, stir well
toss in the pasta, plate and serve (serve with easy to make crescent rolls or store prepared heat and serve garlic bread)
