Lunch Recipe Two: Greek Yogurt Chicken Salad

This light version of Chicken Salad makes for a perfect midday meal!
Greek Yogurt Chicken Salad

Ingredients:
•1 lb roasted chicken, shredded or roughly chopped
•½ red onion grated
•½ cup diced apple
•½ cup halved green grapes
•¼ cup dried cranberries
•1/3 cup chopped almonds or walnuts
•½ cup plain Greek yogurt
•1 tbsp freshly squeezed lemon juice
•Salt and pepper

Directions:
1.Combine all ingredients in a bowl
2.Serve on whole wheat bread or on a bed of spinach
