Toss the first 11 ingredients together. Roast in a preheated oven at 400f. For about 35 minutes, until skin is broken and brown in color
Transfer to a large pot, add lemon and bring to a simmer. Add water if needed.
Puree with a hand blender or regular blender.
Add the basil and oregano, no stem, finish blending.
