Chef Josh from LDS Hospital makes another LiVe Well Recipe
Cocktail de Camarones
Yield: Serves 4-6 people
  • 1 Tbsp. olive oil
  • 1 Lb .shrimp
  • 1 tsp. ancho powder
  • 1 cup diced tomato in juice
  • 1 cup seafood stock
  • 1/3 cup red onion, chopped
  • 1/3 cup celery, chopped
  • 1/3 cup green pepper, chopped
  • ¼ cup lime juice
  • 1 cup ketchup
  • 1 Tbsp, garlic, chopped
  • ½ Tbsp. agave
  • 1 Tbsp. sambal chile garlic sauce
  • 1 bunch cilantro
  • Salt & Pepper, to taste

  • Heat the oil in a large sauté pan. Add in the shrimp and ancho chili powder. Saute until the shrimp are opaque, around 3 minutes.
  • While the shrimp are cooking roughly chop the cilantro. Add the rest of the ingredients together in a bowl and place in the fridge.
  • When the shrimp are finished cooking remove them from the pan and place them in the fridge to cool
  • When the shrimp have cooled place them in the bowl with the other ingredients and stir to combine.
  • Serve with tortilla chips.
