Breakfast Recipe Seven: Bran Muffins

Who doesn't like a warm, homemade muffin every once in a while?
You've got good muffins and bad muffins. And, we're not talking about flavor. These bran muffins won't make you feel the guilt you do when you eat a chocolate muffin from the local  bakery.


Bran Muffins

Ingredients:

•1 ¼ cup whole wheat flour
•1/3 cup brown sugar
•1 cup milk
•1 tbsp baking powder
•¼ tsp salt
•2 cups bran cereal
•1 egg
•1/3 cup unsweetened apple sauce
•2 tbsp coconut oil
•Handful of walnuts
•Handful of cranberries or blueberries

Directions:

1. Preheat oven to 400 degrees Fahrenheit
2. Combine cereal and milk and let soften
3. Combine flour, baking powder and salt in a large bowl
4. Stir in egg, sugar and coconut oil until moist, but not finely combined
5. Add the cereal and milk to the mixture
6. Bake at 400 degrees for 20 minutes or until lightly browned


Don't like walnuts and blueberries? Add any toppings you like to this muffin!
