Celebrate National Spaghetti Day by making your own noodles and loaded pasta sauce

1/03/2018 - January 4 is National Spaghetti Day. Chef Evan Francois and Bob Harmon from Harmons, joined Nicea DeGering to share a special recipe for noodle you can make at home, along with loaded pasta sauce, that the whole family will enjoy.


Fresh Pasta Dough

Serves 4

Prep time 10-minutes/30 minutes rest



1 cup unbleached flour

½ cup durum wheat semolina

½ teaspoon salt

1 tablespoon olive oil

3 eggs


Optional ingredients- sub for 1 egg

3 cups fresh spinach-blanched and pureed

1 tablespoon tomato puree

1 fresh beet, roasted and pureed



Place flour and salt in a mound on the table. Place olive oil and eggs in the middle of the mound. Place the colorings in the middle. Gradually work the flour into the wet ingredients until a stiff but moist dough is formed. Knead until smooth. Let it rest. Roll in machine or by hand for specific recipes.


Loaded Red Sauce

Serves 4-6

Prep time 30 minutes

Cook time 15 minutes



1 cup low sodium chicken stock

½ yellow onion diced

¼ cup red wine

½ cup baby spinach, chopped

½ cup diced tomatoes, low sodium

¼ cup sundried tomatoes, cut into strips

¼ cup cherry tomatoes, halved

¼ cup crimini mushrooms, cleaned and chopped

1 clove garlic, minced

2 tablespoons basil, chopped

2 tablespoons olive oil

1 tablespoon grated cheese

Salt and pepper to taste



In a large sauté pan over medium heat add the olive oil. Sweat onions until translucent and fragrant. Add the sundried tomatoes, cherry tomatoes, garlic, mushrooms, spinach and wine. Cook for five minutes and add the diced tomatoes and chicken stock. Reduce mixture for another 5 minutes, course puree with a mixing wand and garnish with cheese and basil.
