Tangy Marinated Tomato and Cucumber Salad

For the Salad:

1 fresh cucumber, thinly sliced

2-3 ripe tomatoes, thinly sliced

½ red onion, thinly sliced

For the Vinaigrette:

1 large garlic cloved, minced and smashed to paste

¾ tsp. sea salt

½ tsp. freshly ground black pepper

¼ cup apple cider vinegar

1/3 cup water

2-3 tsp. fresh dill, coarsely chopped

4 Tbsp. light olive oil

¼ cup sugar

Scoop vegetables out of the vinaigrette and serve.
Cover tightly with plastic wrap and refrigerate for at least 30 minutes before serving.
Pour over the sliced cucumbers, tomatoes and onion and gently 'toss' the vegetables to coat.
Whisk together ingredients, mixing them well.
Place in a large bowl and set aside while making the vinaigrette.
