Blue Ribbon Cheesecake

Blue Ribbon Cheese Cake
(12 Servings)
Crust:
1 cup graham cracker crumbs
½ cup chopped almonds
3 Tbsp. sugar
½ tsp. cinnamon
¼ cup melted butter
Batter:
2 (8 oz.) pkg. cream cheese
½ cup sugar
2 eggs, ½ tsp. vanilla
Topping:
4 green sour apples
½ cup sugar
½ tsp. cinnamon
½ cup chopped almonds

Directions:
Pre-heat oven to 350°F.   Grease a spring form pan with butter.  In a medium bowl combine crumb ingredients and press into bottom of pan.  Bake for 10 minutes.  In a food processor combine batter ingredients, adding eggs one at a time until well mixed.  Pour on top of baked crust.  In another medium bowl combine topping ingredients and spoon on top of batter.  Bake for one hour.  Turn off oven and leave cheese cake in oven with door propped open until cooled to room temperature.  Refrigerate for 5-6 hours before serving.
