Fresh Summer Salads

Keep your kitchen cool while still enjoying a satisfying healthy meal.
Summer is the perfect time to bring fresh produce into your kitchen. Keep the heat out of your kitchen and enjoy this fresh summer salad topped with a simple vinaigrette.

  • 1 part extra virgin olive oil
  • 2 parts balsamic
  • Fresh orange juice
  • Fresh lime juice


Set aside half the dressing.Toss fresh spring mixed greens, sliced red bell peppers, shredded carrots, mushrooms, tomatoes, cucumbers, and shaved chicken breast in the dressing.

Top with strawberries, blueberries, orange segments, glazed pecans and the rest of the dressing.
