Pumpkin Cupcakes with Cinnamon Frosting

Chef Nettie Frank, of DeseretNewsHomeShow.com makes delicious and seasonal pumpkin cupcakes with cinnamon cream cheese frosting.

Pumpkin Cupcake Recipe:

  • 4 Eggs
  • 1 2/3 C. Sugar
  • 1 C. Oil
  • 1-16 oz. Can of Pumpkin
  • 2 C. Flour
  • 2 tsp. Baking Powder
  • 2 tsp. Cinnamon
  • 1 tsp. Salt
  • 1 tsp. Baking soda
  • 1 tsp. Nutmeg
  • ¼ tsp. Clove

Beat all ingredients up to can of pumpkin with whisk until fluffy, then add all remaining ingredients and stir until smooth. Bake cupcakes at 350 degrees for 30 minutes.

Cinnamon Cream Frosting Recipe:

  • 2 Packs of Cream Cheese
  • 1 Stick of Butter
  • 1 T. Cinnamon
  • 1-2lb. Bag of Powdered Sugar

Beat together butter and cream cheese, then add cinnamon and slowly add powdered sugar.

Chef Nettie Frank will be on the Kitchen Stage at the Deseret News Home Show all weekend, Friday, Oct. 13 at 3:00 p.m., Saturday, Oct. 14 at 11 a.m. and 6 p.m., and Sunday, Oct. 15 at 1:00 p.m. She will also be hosting the Kids Cupcake and Doughnut Frosting Challenges.
