Thrive Omelets

Santa Fe Sausage Omelet
Prep Time: 12 min.
Yields: 4 omelets


Ingredients:
1/2 C. THRIVE Sausage Crumbles (FD)
1/4 c. THRIVE Green Chili Peppers (FD)
2 Tbsp. THRIVE Chopped Onions (FD)
1/2 c. THRIVE Tomato Dices (FD)
1/2 c. water


1 Tbsp. THRIVE Instant Milk Powder
2/3 c. THRIVE Scrambled Egg Mix
1 tsp. THRIVE Chef's Choice Seasoning Blend
1 Tbsp. THRIVE Cilantro (FD)
1 c. water


1 c. THRIVE Colby Cheese
1/4 c. cold water


Directions:
1. Reconstitute cheese with 1/4 c. cold water and set aside. In a separate bowl reconstitute sausage and vegetables with 1/2 cup water. Mix mil powder, eggs, seasonings, and the 1 cup water together until well blended.

2. For each omelet, saute 1/4 of the vegetable mixture in 1 Tbsp. butter or oil. Add 1/4 cup of egg mixture and cook to set, folding in layers with a rubber spatula as they develop.

3. Once liquid is mostly set, flip omelet over and add in 1/4 cup cheese. Allow to melt, but remove omelet from heat before it browns. Fold omelet in half to serve.
