Thai Chicken and Rice Salad
Health Coach Leslie Smoot from Real Foods Market made some delicious salad in the GTU kitchen today. This is the perfect time of year for a picnic by the lake! Toss a few good things together for a hearty salad that is very satisfying. Then stop by Real Foods Market for a few drinks and goodies to round out the meal. It’s that simple!

Thai Chicken & Rice Salad
(Gluten-Free) Serves 7-8
2 c. wild or brown rice, cooked ¼ cup almonds, sliced
2 c. chicken, cooked & sliced ¼ cup coconut flakes, unsweetened
1 red bell pepper ¼ cup chopped cilantro
1 mango
½ cup green onion, diced
½ cup shelled edamame

1/3 cup sweet chili pepper jelly/sauce
¼ cup coconut milk
3 T. apple cider vinegar
1 T. almond butter
3 cloves garlic
2 limes zested and juiced

Combine all salad ingredients into a large bowl. Toss gently to combine. Place dressing ingredients into a blender and blend until smooth. Fold dressing into the salad. Add a pinch of Real Salt if needed.

Simply place fresh greens on the plate and then add a big scoop of this zesty salad. Garnish with a wedge of lime and a sprig of cilantro.
If you are heading to the lake, simply pack it up in a good container and keep it chilled until you are ready to serve. Enjoy!
