Spicy Ramen

A recipe that will have your taste-buds tingling for seconds!

Spicy Ramen

Ingredients:

  • 1 tsp sesame oil
  • 1 tbsp olive oil
  • 3 large carrots chopped roughly
  • 1 yellow onion chopped finely
  • 1 tbsp ginger powder
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 32 oz vegetable broth 
  • 4-5 Porcine mushrooms
  • 1 tbsp Sriracha
  • 2 packages of uncooked ramen noodles
  • 1 large bunch of Bok Choy chopped roughly
  • 1 Serrano pepper sliced thinly (optional)
  • 1 daikon radish sliced thinly (optional)

Method:

  1. In a large soup pot heat oils over medium
  2. Add carrot and onions and cook for 4-5 minutes until slightly softened
  3. Add ginger, salt and pepper
  4. Pour in vegetable broth and add mushrooms + noodles
  5. Bring to a boil, reduce and simmer for 15 minutes and until
  6. Add Bok Choy and cook for an additional 3-4 minutes
  7. Spoon into bowls
  8. Top with Serrano peppers, radish and additional Sriracha if wanted
