Slow Cooker Carnitas

Pico de Gallo 
  • 4-6 tomatoes
  • 1 fresh jalapeno* (remove seeds for less heat)
  • 1 jalapeno (canned)
  • 1/2 onion
  • small cilantro bunch
  • one lime
  • 1 tbs raw honey,
  • salt, pepper and garlic powder to taste.
Chop all ingredients and mix in bowl.
You can add your favorite fruit to the pico de gallo for that special custom taste.
Remove seeds for less heat.
 
Carnitas
  • 3-4 lbs of pork shoulder 
  • 1 cup of cola (regular not diet) 
  • 1 orange 
  • Spices (salt, pepper, cumin, garlic, bay leaf) to taste
Directions: Cut pork in large chunks, combine with all ingredients (use orange juice and orange zest) and place in slow cooker. Set for 4 hours. Strain, place juice/broth in sauce pan and reduce until thickened. Place chunks of pork on cookie sheet, pour reduced broth and place in broiler for 3-6 minutes until crisp. Serve with corn tortillas and pico de gallo.
