Savory Berry Breakfast

Serves 2 to 4

 

Ingredients:

  • Oil
  • ½ onion, diced
  • 2 cloves garlic, minced
  • ¼ to ½ pound bacon, cubed
  • 8 ounces mushrooms, sliced ¼ inch thick
  • 2 large leaves Swiss chard, sliced ¼ inch thick, and leaves chopped (can use any green)
  • ½ pound strawberries, stems cut out and berries quartered
  • 8 poached eggs

 

Instructions:

In a sauté pan over med- high heat, add enough oil to coat the bottom of the pan. Once hot, add in cubed bacon and cook for 2 to 3 minutes. Add diced onions and sauté for a minute or two and then add garlic. Scoop out cooked ingredients and set aside, leaving some of the rendered bacon fat in the pan. If pan is dry use more oil. Place enough mushrooms in the pan to only have one even layer. You do not want them stacked or they will steam instead of sear. Do not flip or stir them until they are browned on the one side. Then you can toss them and continue cooking. (If you were not able to do all the mushrooms at one time, do them in batches.)

 

When the mushrooms are cooked, add in the greens. Toss until wilted and add the bacon mix and the strawberries. Ready to serve once berries have warmed; serve on a plate or shallow bowl with poached eggs.
