Potato Leek Soup

Chef Evan Francois from Harmons shared a soup recipe that will warm you right up! 
 
Potato Leek Soup
 
Serving: 4
Prep Time: 20 minutes
Cook Time: 1 Hour
 
Ingredients:
  • 3/4 cup bacon, diced small
  • 1/2 sweet onion, diced
  • 1 leek, cleaned and sliced
  • 1 quart chicken stock, low sodium
  • 1 cup heavy cream
  • 2 cups Yukon potatoes, peeled and diced small
  • 2 tablespoons chives, chopped
  • Salt and pepper to taste
 
Directions:
  1. In a stock pot over medium heat add the bacon and cook to render the fat.
  2. Remove the bacon and add keep the fat in the pot.
  3. Add the onion and leeks, sauté for 2 minutes.
  4. Season with salt and pepper.
  5. Whisk in the chicken stock and add potatoes.
  6. Bring to a simmer and cook until potatoes are over cooked.
  7. Puree the soup in a blender.
  8. Add the cream to adjust the thickness.
  9. Season with salt and pepper.
  10. Garnish with chives and bacon.
