Lunch Recipe Seven: Open-faced Avocado and Egg BLT

Open-faced Avocado and Egg BLT

•1 slice whole wheat bread
•1 avocado
•Minced garlic
•2-3 slices of bacon
•Small handful of leafy greens
•1 tomato
•Red onion
•1 Hard-boiled egg

1.Bring a pot of water to a boil
2.Add eggs to boiling water and allow to cook for 12-15 minutes
3.While eggs are boiling, cook up a couple slices of bacon in a frying pan
4.In a bowl, slice avocado and mash with jarred, minced garlic (or sauté your own) with a fork
5.Slice tomato and onion
6.Once eggs are boiled, spread the avocado garlic mixture onto your slice of bread
7.Top with bacon, onion, leafy greens, tomato boiled eggs
8.Sprinkle with salt and pepper to taste
