Lemon Roasted Chicken


1 (5 Lb) whole chicken, remove neck and giblets
1 lemon
1 head garlic
Salt and pepper
Stuff chicken cavity with salt and pepper, lemon, and garlic. Roast in pan for 1 hour @ 400 degrees. Next baste with mixture and roast for 45 minutes.

For basting mixture;
4 cups chicken stock
½ cup lemon juice
2 Tbsp olive oil
1 Tbsp rosemary
Whisk together and baste chicken every 15 minutes after the 1st hour of cooking.
