Hummingbird Cupcake Churro

Hummingbird Cupcake Churro batter
  • 1c. AP flour
  • 2tbsp sugar
  • 1tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2c butter
  • 1/2c water
  • 7eggs

  • 1c butter
  • 8oz cream cheese
  • 2c powdered sugar
  • 1/2c drained crushed pineapple
  • I smashed banana
  • I/4c chopped pecans

  • Combine dry ingredients. Melt butter in a saucepan with water and bring just to a boil. Turn to low and Add dry ingredients continuously working/stirring until batter no longer sticks to the sides of pan and balls up into one ball. Let cool. Put in mixer and add 1 egg at a time allowing to fully incorporate each one before adding the next.
  • To make frosting combine butter and powdered sugar in mixer until fluffy. Mix in cream cheese then add pineapple, banana,
  • and pecans.
  • Pipe batter into cooking oil to fry. Roll in cinnamon sugar. Dip in frosting.
