Chinese New Year's: Easy Ham Fried Rice & Egg Rolls

2/16/2018 - While those of us here in America celebrated the New Year over a month ago, China is celebrating theirs today. Happy Chinese New Year! Chef Cheryl from Harmons, joined Emily Clark, to show us how to celebrate.

Ham Fried Rice


Perfect Rice

  • 1 C. Long Grain Rice
  • 2 C .Water
  • 1 tsp. Salt


  • 2 1/2 -3 C. Prepared rice
  • 1/4 C. Canola Oil
  • 1 Onion
  • 2 Eggs, lightly beaten
  • 1/3 C. Corn Kernels
  • 1/3 C. Peas
  • 1/3 C. Carrots
  • 1/3 C. Diced Ham
  • 1/2 C. Soy Sauce
  • 1 tsp. Garlic Powder
  • 1/2 tsp. White Pepper
  • Salt to taste


Place all ingredients in covered saucepan. Turn on heat and bring to a boil. Once steam begins to escape from the side of the lid, TURN OFF THE BURNER. If using an electric stove, move pot just off burner element. If using gas, the pot can stay where it is. Set timer for 30 minutes. Do not open lid until timer is complete. Fluff with a fork. Rice will be perfect every time without scorching on the bottom of the pan. Combine all ingredients.

Egg Rolls


  • Salt and Pepper to taste
  • 1, 14 oz. pkg Pre-Shredded Cole Slaw Mix (Cabbage & Carrots)
  • 1/2 tsp. Dry Ginger Powder
  • 1/2 tsp. Garlic Powder
  • 1 pkg. Egg Roll Wrappers


  1. Saute Cabbage & Carrot mixture, ginger and garlic powder. Stir fry this mixture just until cabbage  wilts.
  2. Taste and adjust seasonings.
  3. Fill egg roll wrappers with 2-3 Tbsp filling mixture. Roll up using water to seal edges.
  4. Fry in 325 oil until crispy, approximately 4 minutes.

Egg Roll Dipping Sauce


  • ½ Cup Sweet Chili Sauce
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Mirin
  • 1 tsp Sambal Oolek Hot Pepper Sauce

Combine all ingredients.
