Grilled Bacon Wrapped Peaches with Peach Syrup

Chef Greg Neville, Food and Beverage Director at Solitude Village joined Jessie in the kitchen today to make a recipe that is being served at An Evening with Epic Brewing at Solitude Mountain Resort. The event is being held tomorrow, August 29, 2014, at 6PM on Solitude’s Inn Lawn.

Grilled Bacon Wrapped Peaches with Peach Syrup

6 slices bacon
2 peaches
3 basil leaves julienne

  1. Wrap bacon around peach sections. 
  2. Place on hot grill.
  3. Turn occasionally until bacon is crispy. Arrange on serving platter.
  4. Drizzle with peach syrup and garnish with basil

Peach Syrup:
1 peach, pitted. peeled and cut
2 oz sugar
1 oz honey
2 oz balsamic vinegar
2 oz. Water

  1. Place all ingredients into small saute pan under medium heat.
  2. Stir occasionally until peach is soft and beginning to break apart.
  3. Place in blender and pulse until smooth. Strain and set aside.
  4. May be made several days in advance if kept chilled.
