Gluten-Free, Dairy-Free Creamsicles

Orange Creamsicles/ Orange Sherbet

  • 1 can unsweetened coconut milk (full fat)
  • 1/3 cup raw, unfiltered honey (local is best)
  • 1-1/2 cup orange juice
  • 1 tbsp. fresh lemon juice
  • 1/8 tsp. sea salt
  • 1 tsp. vanilla extract
  • 1/2 tsp. orange zest

  1. In a medium saucepan heat the coconut milk and honey
  2. Bring to a low boil
  3. Simmer, stirring constantly for about 10 minutes until it is slightly reduced and thickened
  4. Allow the coconut mixture to cool
  5. Add in the orange and and lemon juice, salt, vanilla and zest
  6. Stir everything together and pour into popsicle molds or an ice cream maker
