Garden Gazpacho with Olive Oil Sorbet

  • 1 Cup tomatoes, chopped
  • 1 Cup peppers, chopped
  • 1 Cup cucumber, chopped
  • 1 Cup red onion, chopped
  • ¼ Cup plus 1 T tomato paste
  • 3 T honey vinegar
  • 3 Cups tomato or vegetable juice
  • ½ Cup extra virgin olive oil
  • Salt and pepper to taste
  • Olive Oil Sorbet
Place all ingredients together in a non-reactive container. Allow flavors to marry overnight, up to 2 days. Place ingredients in a vita-prep blender and blend until smooth. Pass through a fine mesh sieve. Garnish with Olive Oil sorbet and fresh herbs. Enjoy!
