Dinner Recipe Three: Zucchini Pasta with Homemade Marinara

The crazy thing is you don't need to have pasta with marinara sauce. Instead, slice up your zucchini in small, long slivers and treat it just the same! Plus, this marinara sauce made from scratch is to die for. 

Zucchini Pasta and Marinara

Homemade marinara sauce:

•1 roll italian sausage
•1 32 oz can stewed tomatoes
•Large handful fresh basil
•½ onion, chopped finely
•2 garlic cloves, minced
•Large handful spinach
•1 cup red wine
•¼ cup Brown sugar
•Red chili pepper


1.In a frying pan over medium heat, cook sausage and set aside to drain
2.In a large pot over medium-low heat, sauté onion and garlic cloves
3.Add large (32 oz) can stewed tomatoes to your large pot
4.Add ¼ cup brown sugar and then add to taste if you like your marinara sauce sweeter
5.Add 1 cup red wine, then add to taste if you like a more savory taste your marinara sauce
6.Add red chili peppers to taste
7.Add sausage to your sauce
8.Add fresh basil and spinach
9.Cook until sauce is to a light boil

Zucchini Noodles:

1.Slice 1-2 zucchinis into long, skinny slices 
2.Cook zucchini slices in frying pan with some olive oil and substitute for noodles
