Dinner Recipe Seven: Mozzarella Stuffed Chicken

Everyone needs a little Italian flavor in their kitchen every so often. Skip the stuffed shells and stuff a few chicken breasts instead!

Mozzarella Stuffed Chicken Breasts

  • 1 tbsp dried oregano
  • 1 tbsp chopped fresh parsley or dried
  • 2 garlic cloves, minced
  • ½ cup olive oil
  • 1 egg, whisked
  • ½ cup milk
  • 1 tbsp water
  • ½ cup Italian bread crumbs
  • 1 block mozzeralla
  • 4 boneless chicken breasts

  1.  In a small bowl, add oregano, parsley and garlic
  2.  Combine milk and beaten egg into a bowl
  3.  Add bread crumbs into another bowl
  4.  Cover chicken breasts with plastic wrap and use rolling pin to flatten chicken breasts to 1/8 inch of thickness
  5.  Sprinkle herb mixture on one side of chicken and add ½ tbsp mozzarella to the middle of the chicken breast
  6.  Fold in the sides and roll the chicken over the mozzarella, repeat with remaining chicken breasts
  7.  Dip chicken rolls in egg and milk mixture
  8.  Coat chicken breast in bread crumbs
  9.  In a large skillet, brown all sides of chicken rolls and place into a baking dish that has been sprayed with olive oil
  10.  Bake uncovered in 400 degrees for 15-20 minutes, or until cooked
