Dinner Recipe Five: Citrus Infused Herb Salmon

Sweet and tangy, the taste of summer in this salmon is something you can't miss. 

Citrus Infused Herb Salmon with Baked Butternut Squash


•2 salmon filets
•1 butternut squash
•½ orange zested and juiced
•½ lemon zested and juiced
•2 tsp mustard
•¼ cup extra virgin olive oil
•Coarse sea salt to taste
•Ground black pepper to taste
•Fresh parsley leaves, rough chopped

Directions for salmon:

1.Mix orange zest and juice with lemon zest and juice together in a bowl
2.Add mustard, salt and pepper
3.Add chopped parsley
4.Add olive oil and whisk together
5.Baste salmon filets with the citrus herb mixture
6. Wrap fillets loosely with foil
7. Grill on a medium heat

Directions for butternut squash:

7.Quarter butternut squash
8.Add 1 inch of water into a large baking dish
9.Add butternut squash to the dish faced down
10.Cook at 350 degrees for 40 minutes
11.Top with brown sugar and butter
