Chicken Broccoli Alfredo
  • 3 TB olive oil
  • 2 chicken breasts
  • 2 cloves garlic, minced
  • 21 oz. chicken broth
  • 1 1/2 c. heavy cream
  • 1/2 lb. penne pasta
  • 2 c. Parmesan cheese
  • 1 c. broccoli, cut in florets
Cut the chicken into 1 inch pieces. Season with salt and pepper. In a skillet brown chicken over medium heat. The chicken does not need to be cooked through at this point, it will continue cooking as it simmers. Once chicken is browned, add minced garlic and sauté for about 1 minute. Add chicken broth, cream and uncooked pasta to pan and stir. Let simmer for 10 minutes. Add broccoli florets and simmer for another 10 minutes. Remove from heat and stir in shredded Parmesan cheese. Serves 4.
