Yields 3 tacos
3 oz grilled tri-tip, small diced
3 oz roasted butternut squash
3 tsp crumbled feta cheese
3 tsp roasted pumpkin seeds
6 corn tortillas
3 TBL oil
1 teaspoon salt
Place 1 TBL of oil in sauté pan, place on high heat. Once pan is hot, add meat and roasted squash. Sauté for 1 min or until meat is cooked through. In separate sauté pan place 2 TBL of oil and turn heat to medium, place corn tortillas in pan and heat until warm and flexible.
To assemble tacos, place to tortillas on top of each other, add 2 oz of meat/squash mixture, add 1 tsp of feta and 1 tsp of toasted pumpkin seeds on top.
