Blueberry Breakfast Bars
Are you rushed for breakfast in the morning? Make these delicious bars ahead of time, and take your breakfast on the go. These bars also make a great trail snack.
  • 1 ripe banana
  • 2 large eggs
  • ⅓ c low-fat plain yogurt
  • ½ c applesauce
  • 2 tbsp coconut oil, melted
  • ⅔ c brown sugar
  • 1 tsp vanilla extract
  • 1¼ c whole wheat flour
  • 1 c rolled oats, divided
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ⅔ c pecans
  • 1 c fresh blueberries

Preheat oven to 350˚F. Add bananas, eggs, yogurt, applesauce, oil, brown sugar, and vanilla to jar. Secure lid and select “Batters.” Add whole wheat flour, ¾ c rolled oats, baking powder, salt, cinnamon, and pecans to jar. Secure lid and press “Pulse” 4–6 times or until dry ingredients are incorporated. Fold in blueberries. Pour batter into a greased 9" x 13" baking pan. Bake 30–35 minutes or until toothpick inserted in center comes out clean. Cool completely. Remove from pan, and cut into 15 bars. Bars can be individually wrapped and stored for 3 days or frozen for 3 weeks.
