3 healthy cookie dough recipes

As weight loss hopefuls ring in the new year with new health and fitness goals, Ricci Martinsen Sorensen is here to help!  During Tuesday's kitchen segment on Good Things Utah, she showed us how to whip up delicious cookie dough that is totally guiltless. 

 

Chocolate chip cookie dough:

Ingredients:  1 c. Raw pecans, 8-10 dates, 1/4 tsp. Vanilla

  • -Process in food processor until it forms a ball. Fold in 2-3 T. Dark chocolate or dairy free chocolate chips.
  • Take about 1 T. Roll in hands into a ball and place in the refrigerator to chill.

 

Almond Joy cookie dough:

Ingredients:  1 c. Raw Almonds, 8-10 dates, 1/4 tsp. Vanilla

  • Process in food processor until it forms a ball. Fold in 2-3 T. Dark chocolate or dairy free chocolate chips, and 2-3 T. Of finely shaved raw coconut.
  • Take about 1 T. Roll in hands into a ball and place in the refrigerator to chill.

 

Snickerdoodle cookie balls:

Ingredients:  1 c. Raw cashews, 8-10 dates, 1/4 tsp. Vanilla, 1/4 tsp. Cinnamon

  • Process in food processor until it forms a ball.
  • Take about 1 T. Roll in hands into a ball and roll in cinnamon and sugar.
  • Place in the refrigerator to chill.
