A sugar-free and delicious way to make use of the over-abundant harvest!
1 cup XyloSweet xylitol granules
1½-2 cups grated zucchini
½ cup oil or ½ cup unsweetened apple sauce
1½ tsp cinnamon
½ tsp salt
½ tsp baking soda
¼ tsp baking powder
Beat eggs and XyloSweet together. Add oil and grated zucchini. Mix well.
Whisk together the flour, cinnamon, salt, baking soda and baking powder. Gradually add this to the zucchini mixture. Blend well, but do not overmix. Pour into greased and floured loaf pan.
Bake at 350° F. for 50 to 60 minutes - check by inserting a toothpick; bread is done if the toothpick comes out clean.
Let cool and then slice.
