Slow Cooked Pulled Pork Sandwiches with Grilled Fruit Skewers

Slow Cooker Pulled Pork Sandwiches with Grilled Fruit Skewers

Ingredients:

2 Lbs. pork tenderloin
1 (12 oz.) bottle root beer
1 (18 oz.) bottle bbq sauce
8 hamburger buns

For Fruit Skewers:
12 wooden skewers
fresh strawberries
Pineapple, sliced into chunks
Mango, sliced into even pieces

Place the pork tenderloin in a slow cooker; pour the root beer over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours. Note: the actual length of time may vary according to individual slow cooker. Drain well. Stir in barbecue sauce. Serve with toasted hamburger buns.

To make fruit skewers: Soak skewers in cold water 30 minutes. Prepare grill to medium heat. Thread fruit onto skewer and place on grill about 6 minutes, turning as needed.
