Fresh Cherry Salsa
makes 2.5 cups
whisk together 1.5 cup red pepper jelly, 1 TBSP lime zest, .25 cup fresh lime juice, and .25 tsp dried crushed red pepper in a small bowl. Stir 2 cups pitted, coarsely chopped fresh cherries, .75 cup diced fresh nectarines, and 1/3 cup each chopped fresh cilantro and chives. Serve over fish, chicken or pork. Also can be served with brown rice to add flavor. Try it over roasted veggies. If nothing else, serve with tortilla chips.
