Delicious Avocados
Serves 1 person
2 ripe avocados
1 hoja Santa and/or plantain leaf/spinach
2 Tbsp. Olive oil
3 Tbsp. Greek yogurt
Orange segments
5 slices cauliflower

Remove husk & pit from avocados.
Put in a small bowl, use a fork and mash leaving chunky while adding tbsp of olive oil. Extend hoja santa(leaf, spinach etc) on counter put 2 or 3 tbsps of avocado, and roll as if rolling a burrito. when a cylinder, cut it in 1/2 an inch leaving burrito slices.Put aside
Thinly slice cauliflower; get segments from orange in a small dish.
Place dollop or 3 tbsps of Greek yogurt on plate, then place raw cauliflower with salt on top and add medallions of avocado. Add orange segments on top and granola. And a pinch of salt. Enjoy.
