Spring Asparagus Salad

Spring Asparagus Salad

1 Lb asparagus spears

2 Tbsp. olive oil

4 cups arugula

4 oz parmesan cheese

Dressing: ¼ cup olive oil

3 Tbsp. lemon juice

½ tsp. Real Salt (kosher)

¼ tsp. freshly ground black pepper

Trim asparagus. Coat lightly with the oil and sprinkle with salt and pepper. Bake in oven at 350 degrees for 12 min. or until crisp-tender. Make the dressing in a blender; set aside. When asparagus is still warm, toss with arugula and dressing. Place on salad plates and top with parmesan cheese curls. Serve immediately.
