Quick Bean Burritos

Quick Bean Burritos


8 oz can black beans

½ Tbsp. chili powder

½ Tbsp. cumin

4 flour or wheat tortillas

½ cup Monterey Jack cheese, shredded

½ cup salsa


· Rinse beans in cold water, drain well. Combine beans, salsa, cumin and chili powder in large pan. Cook over medium-high heat for about ten minutes, mashing beans slightly as they cook. Stir occasionally, adding water as needed if mixture is too dry.

· Spoon bean mixture into tortillas. Top with cheese. Fold each tortilla into an envelope shape, tucking in both ends.
