Gremolata Butter

Matt Brown, Executive Chef at Rio Tinto Stadium, makes Gremolata Butter.

RECIPE:

Gremolata Butter

1 cup chopped parsley

½ cup whole garlic cloves

½ cup lemon zest

1 lb butter (unsalted)

Set butter at room temperature for one hour

Chop parsley, garlic and lemon zest until fine

Add butter and mix until thoroughly combined

Place in bowl and use brush to apply to meat
