Dessert on the Grill

Chef Tom grills dessert!

1 Angel Food Cake
2 Lbs Strawberries
1/3 cup white vinegar
¼ cup sugar
1 cup Balsamic Vinegar
Extra Virgin Olive Oil
Ice Cream or Whipped Cream

Over low heat, reduce Balsamic Vinegar until it is 1/4th of its original volume. Set aside.

30 minutes before grilling clean and trim the strawberries. Place in a large non reactive vessel at least one gallon in size. Add 1 gallon water, and the white vinegar. Let soak for 30 minutes.

Meanwhile, cut Angel Food Cake into 10-12 equal slices. Drizzle/brush each cut side with olive oil.

Drain the strawberries in a collander and toss with sugar.

On a preheated grill set at medium to low heat, place each piece of cake on the grill, and cook until lightly browned - about 2 minutes per side.

Place berries on the grill, and cook until warmed through, and sugar has been dissolved. - 4-5 minutes.

Plate cake, then strawberries, and then top with ice or whipped cream. Drizzle with balsamic reduction and enjoy!
