John Wayne Casserole

Ingredients:

  • 1 -8 oz. can Jalapeno (or green) chilies, drained and diced
  • 1 lb. cheddar cheese, grated
  • 1 lb. Monterey Jack cheese, grated
  • 4 eggs, separate whites and yolk
  • 1 can evaporate milk
  • 1 tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 tomatoes, sliced
  • 2-3 tbsp. white sugar

    Preparation:
    Grate cheeses. Combine chilies and cheese and place in a well buttered 2 quart casserole dish. Beat egg whites at a high speed to stiff peaks. Combine egg yolks, milk, flour, salt and pepper. Fold in egg whites. Pour into casserole over grated cheese. Bake at 325 for 30 minutes. Remove and carefully place slived tomoates over the top of the casserole. Sprinkle tomoatoes with sugar. Return to oven and bake for additional 15 minutes. Serve.
